For this Perzik, we macerated peaches from Ludo Rosseels from Gelrode, Vlaams-Brabant, Belgium. Maceration time was four months. For the maceration and the blending, we used lambikken from five different barrels and not less than sixteen different brews. Most lambik was one- and two-years old, and about one third was three years old. This way, the weigthed average age of the blend upon bottling was more than 14 months. The final fruit intensity is about 300 grams of ripe yellow peaches per litre of Perzik. 100% 3 Fonteinen.

Kriek will be at its fruitiest when enjoyed young. Aging allows the Lambic to fully express itself, sometimes at the expense of the fruitiness.
3 Fonteinen Pruim is the slow and all-natural maceration of hand-picked whole plums or zwetschgen on traditional lambic. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.
For this Pruim, they used the old plum variety Belle De Louvain, hand-picked in Limburg, Belgium. Maceration took almost four months and the lambics for both maceration and blending originate from six different barrels and thirteen different brews, of which the oldest brewed end of October 2018. The weighted average age of this fruit blend is almost 22 months. The final proportion of fruit used is 385 grams of plums per litre of Pruim. Almost half of the cereals used originate from the Pajottenland. 100% 3 Fonteinen brewed lambic.
