From 3 Fonteinen:

For this Perzik, we macerated peaches from Ludo Rosseels from Gelrode, Vlaams-Brabant, Belgium. Maceration time was four months. For the maceration and the blending, we used lambikken from five different barrels and not less than sixteen different brews. Most lambik was one- and two-years old, and about one third was three years old. This way, the weigthed average age of the blend upon bottling was more than 14 months. The final fruit intensity is about 300 grams of ripe yellow peaches per litre of Perzik. 100% 3 Fonteinen.

Beak Brewery's Nolia is a premium alcohol-free IPA that aims to be the best in the UK. It is a separate project from the main Beak Brewery, focusing specifically on high-quality, alcohol-free beer. Nolia is described as hazy and juicy, with flavors of apricot, mango, and lime mojitos, achieved through the use of hand-selected hops from the Yakima Valley in the US and Nelson in New Zealand.

Nolia is designed to be a premium alcohol-free IPA, it uses hand-selected hops from Yakima Valley and Nelson. The beer has a hazy appearance and juicy flavor profile, it is characterized by flavors of apricot, mango, and lime mojitos!

Rodenbach Grand Cru is an exceptional Flemish red-brown ale that owes its fresh and sour taste and complex fruitiness to its lengthy partial maturation in wooden oak casks.

Blend of Lambics and sour cherries at a ratio of 200g per litre.

A beer with a tart red fruit flavor and subtle almond notes.
Kriek will be at its fruitiest when enjoyed young. Aging allows the Lambic to fully express itself, sometimes at the expense of the fruitiness.

3 Fonteinen Pruim is the slow and all-natural maceration of hand-picked whole plums or zwetschgen on traditional lambic. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.

For this Pruim, they used the old plum variety Belle De Louvain, hand-picked in Limburg, Belgium. Maceration took almost four months and the lambics for both maceration and blending originate from six different barrels and thirteen different brews, of which the oldest brewed end of October 2018. The weighted average age of this fruit blend is almost 22 months. The final proportion of fruit used is 385 grams of plums per litre of Pruim. Almost half of the cereals used originate from the Pajottenland. 100% 3 Fonteinen brewed lambic.

For this blend of Oude Geuze Cuvée Armand & Gaston, we blended lambikken from four different barrels and ten different brews. As we used about 20% of four-year old lambik and a lot of two year old lambikken, the weighted average age of this blend upon bottling was 24 months. Add to that another three years of cellaring which brings the weighted age of this bottle to 50 months upon its release. More than 80% of the cereals used in the brews for this blend, were sourced from our own Pajottenland Cereal Collective. While blending, we added some honey from our own bee hives in our Schaarbeekse cherry field.
